Who doesn't like pizza?
I love me good junk food. But I hate having a sore stomach, and being bloated isn't cute.
When I saw this recipe on a quinoa pizza crust, my heart raced a little bit and I texted my roommate immediately. Our Friday night consisted of cooking healthy but oh-so-delicious pizza and watching Will Smith and Eva Mendes in "Hitch". We're wild.
This is not my recipe, but I did put my own flare on it as far as toppings. I'm a big believer in "more is more" when it comes to pizza accoutrements. Pile it high, baby.
The Ultimate Quinoa Pizza Crust (www.simplyquinoa.com)
- 1 cup quinoa (soaked in 2cups of water for 8hours, then rinsed)
- 1/4 cup water
- 1/2 tspn salt
- 1/2 tspn baking powder
- Combine and blend in the food processor and make yourself some pizza crusts! (We made two single serving pizzas with these quantities)
