It's no secret that Gisele Bundchen and Tom Brady both have insane bodies. It's also no secret that they follow a very strict diet. Their chef Allen Campbell recently gave everyone an inside look at what it's like to cook for the family and types of meals they eat, plus event went as far as to share that Gisele does not eat: sugar, flour, MSG, canola oil, iodized salt, coffee, dairy, gluten or nightshades (tomatoes, peppers, mushrooms and eggplants). What they do eat: 80% vegetables, 20% lean meat/fish and limited fruit. Oh, and always organic. Duh.
Earlier this week I interviewed a Canadian living abroad in Costa Rica, Joanne Gerrard Young, founder of The Healing Cuisine and the personal chef of Gisele and Tom when they spend time at their home in Costa Rica. We bonded over the benefits of living a #healthyishot lifestyle, the importance of making nutrient-dense meals and she told me all about her yoga/cooking/health retreat in Costa Rica that almost had me booking a flight right then and there. Plus... She showed me how to make a raw, vegan, gluten-free almond CHEESECAKE. As if I needed another reason to like this woman.
She's a pro and eye-balled everything so I have no idea what the quantities are but here's my hung:
- Pre-soaked cashews blended in a high-power blender with water
- Add equal parts coconut oil, almond butter, maple syrup, pinch of salt, 1 vanilla bean
- Pour into a container and stick in the fridge for 1-2hours
- In a small bowl, mix equal parts coconut oil and maple syrup and half of that amount of raw cacao powder. Voila, chocolate ganache to add on top of the "cheesecake"!
This was an Etalk assignment and I'm utterly grateful that they continue to assign me lifestyle segments that promote healthy living; something that is incredibly important to me. If I can continue to embody #healthyishot during this new chapter in my career, I will be on my way to making my dreams come true (stay tuned...).
