Cooking w/ Chloe: Sushi, hold the rice.

Love sushi? Me too.  

Feel like an ass-hole when you eat sushi and pick out the rice? Same. 

Cooking w/ Chloe to the rescue. 


The low-carb adventure continues with the MMVA's only 20 days away (AH!!) and I feel like I just found a pot of gold at the end of the rainbow. Anyone who works with me can attest that I am a tupperware-lady. My goal is to bring lunch 4 days a week and treat myself to take-out on Fridays! Bringing your lunch to work is not only healthier but it will also save you a ton of moolah but a low-carb lifestyle makes easy options like sandwiches a no-go, plus a girl can only eat so many salads in a single week... 

Ladies and gentlemen (hi boys!), I present to you: rice-less sushi. Ridiculously easy to make and wildly versatile, these babies are not only delicious but also pack a serious dose of veggies in each roll. 


What you need:

  • 2 sheets of nori paper 
  • 1 small avocado
  • Alfafa sprouts
  • Cucumbers sliced nice and thin
  • Sesame seeds 
  • Salt & pepper (to taste)

Once you've got your desired fillings, split the ingredients over 2 sheets and roll it up. A little wetness goes a long way for "sealing" the nori paper. I like my rolls (and life) on the saucier side so I drizzled hot sauce and a little mayo over top before rolling it up.
